National Gumbo Day
October 12-19, 2017

For F.E.E.D. TX Culinary Director Lance Fegen, National Gumbo Day (October 12) is personal. Gumbo is the first dish he learned how to make at his first job in a kitchen, at Crazy Cajun in Seabrook. After attending culinary school at Culinary Institute of America Hyde Park, Lance worked at Brennan’s of Houston, where he continued to master the art of making the quintessential Creole dish. By the time he and F.E.E.D. TX partners opened BRC Gastropub, he decided to start featuring his own Gumbo recipe on Fridays. After seeing how much BRC guests loved his take on it, Lance knew that Gumbo would be the first dish on the menu at Liberty Kitchen. These days there are four Liberty Kitchen locations, all of which serve Lance’s signature Gumbo.

From October 12-19, $1 from each cup and $2.50 of each bowl of Creole Whole Crab, Shrimp & Andouille Gumbo sold will benefit the Texas Marine Mammal Stranding Network (TMMSN). The success of this organization is also a highly personal matter for Lance. As a volunteer for the non-profit entity, Lance helps rescue and rehabilitate dolphins in the Galveston Bay, an experience he describes as “life-changing.” Lance knows that marine mammals need us now more than ever, and sees National Gumbo Day as an opportunity to kick off a week-long celebration of one of his favorite dishes while benefitting some of his favorite creatures.
